I assume I remove it with the 2 big bolts next to the wall... do I need to cut the water off before doing so?

I've just replaced that, a new mixer tap off Amazon cost me £60 and I paid a bloke £80 to fit it.

There should be local 1/4 turn isolation valves on the hot and cold pipes somewhere. Is this a shower cubicle or a bath? If bath, take the panel off and look underneath. If shower... Well hopefully there is a hatch somewhere.
The head of the tap usually has a small screw holding it on. Undo it and it will reveal the top of the valve.
When the water is off (if you can't find/have no local isolation turn it off at the main stopcock) use an adjustable spanner / plumbers wrench to undo the valve. There will be a 'nut' built in to it.
Go to merchant, show it to them, get new one and reverse the above process.
Failing that get a plumber.

The tap will come off and there will be a Thermostatic Mixer Valve inside.
Take it to a good plumbers merchant and replace it.
