I use Windows on one of my servers, Linux on the other. Both are pretty straightforward. The Windows one is because I have a few bits and pieces of software that are Windows only.
I find the Windows server a lot easier to manage, it's all done through remote desktop and I'm more familiar with Windows. The Linux one is mainly via the terminal which is obviously a lot more exacting and less intuitive. They're both very stable.
Ultimately look at what you want to run, make sure nothing is OS specific and then install whatever you want. Whatever you install will probably do the job.
