    i keep meaning to take pizza pics, but they don't linger around on the table for long enough

    had my sisters family over and we ate a fuck ton of pizza, each person nominated ingredients they wanted and we shared pizzas. used the franco manca dough recipe. uni pro got up to 490C using charcoal and wood to get it lit and then just oak kindling to keep it burning. am finding the routine is to put additional wood into the burner, stretch dough, top it and by then the oven is back up to temperature.

    tartufata, wild mushrooms, burrata, mozzarella and san daniele ham (no passata)

    gorgonzola, burrata, pear and walnuts (no passata)

    artichoke, baby tomatoes, nduja, mozzarella and rocket (no passata)
