Cantilevers haven't given me that kind of trouble.
I'd say if @ngok is interested in the aesthetic they should go for it.
If you want to install them quickly and not worry about it, go for v brakes.
If you want your bike to look great and are willing to spend a couple of hours setting up the brakes, then some more when you need to adjust them, get cantis.
I have both on different bikes, but I wouldn't get cantis for a touring bike.
