A couple of different reasons, I really enjoyed the remoteness experienced during the Turin to Nice Rally, I generally prefer being high up in the mountain rather than down along the valleys and also stumbled upon this video
which inspired me.Thanks for the hint re goats.

To be honest I don't think you can go to far wrong in the region no matter the route. The first night and morning of the original route was probably the most "forgetful" because it was either done in the dark or there were slightly better parts later so a tweak to the route doesn't diminish it in anyway.
Any reason you are so keen to go gravel? The roads are very quite and the biggest danger are the goats, cows and sheep that are meandering around - watch out for those as you go down.
