An “easy out” would be the best thing. They are reverse threaded and will cut in to the grub stew and allow you to extract it.
Or if you don’t want to spend out on them you can use a T head of a similar dive to the Allen key,Tao it in with a hammer and hope it grips -

If it’s a brake pad isn’t it a exposed bolt rather than a grub screw?

dremel a slot then use a flathead screwdriver

I've finally got the screw out. Does anyone know which is the best type to avoid them galling or getting a stripped head again?

Black steel ones and put grease on the threads. Stainless mashes up quite easily and also binds in aluminium.

I'd say Torx drives, but its important to use the right screw driver. I use this Torx screwdriver set : https://www.accu.co.uk/en/ifixit-screwdriver-kits/499152-EU145398

I've found some torx drive grub screws that are A2 stainless steel, whats the best coating to make sure it doesn't bind? Zinc?
