Thanks @Scrabble and @Turkish for the tips! I‘d rather not build the wheels myself (yet) as I want to get the bike on the road ASAP. I might just pay someone to build me a rear wheel, if I can’t find anything in the shops or second hand.

You can use 35c tyres on an older, narrower rim. It'll make the tyre a tad smaller, but won't explode, unless you want to run low pressure.

My mtb has a 2.3" on a 19mm rim and its fine

Don't listen to Phil, it works well and you should do it. You also don't have to muck about with cable housing under the bars if you want to go back to 1x
