Sure. They swing around even if you pack them light. When you stand on the pedals to climb you can feel your butt swaying left to right.

I agree with this. Altho even the shittiest Alpkit Koala can work packed nicely or with a support mounted to the seatpost.
Plus just bring less shit. -

Have used a basic ortlieb saddlebag/seat pack for years and they really don't sway.
But if you don't like them, fair enough. The attachment and the closure on the ortliebs is a bit annoying but pretty easy when you have the knack.
I think your bike looks pretty cool, but you seem to like changing bikes around ;)

I used a big carradice longflap (or camper, can never remember) at the front and the ortlieb at the back under the saddle.

I think it should be more like this otherwise the bags don’t have lower horizontal support. Still super functional rig. Wouldn’t mind having a flat bat for pootling.

Impossible for me. I've spent a few years now figuring out how I want my touring bike to ride. and as it turns out I'll do anything to avoid using a seat-pack, so this front set up is my savior!
