also, if you dont want to mess about with fresh yeast (cc: @Cazakstan), i highly rate this recipe. i give it a good long proofing in the fridge ... like 16-24h if poss and take it out and let it get to room temp before using...

I did both pizza stone in the oven and pan/grill method this weekend. Same dough. Pan/grill was better I thought.

I use the robertas recipe but barely mix it or knead it and get decent results.
Mix flour and starter mixture until it resembles pic 1
Leave for a couple of hours at room temp or overnight in fridge until it looks like pic 2
Give it a fold, leave for half an hour and then portion into balls
Ensure its at room temp before shaping into pizzas
I use 100% Shipton Mill organic no4

I really want an ooni pro as we produce tons of oak here so have an abundance of kindling.

From my experience with my Roccbox I'd sack off any notion of having a wood fired oven. I'm grabbing a gas canister today and seeing how that pans out.
The new Ooni looks dead nice, the gas powered one. That is what I'd buy after trying a wood burner. -

The ooni pro has both options, gas and wood. I have a spare bottle of gas so could try both methods.

Oh aye, my point was more just forget about wood, and the new gas ooni looks way nicer.
Just fired up the gas on the Roccbox, it better bloody work this time.
