  • I use the robertas recipe but barely mix it or knead it and get decent results.
    Mix flour and starter mixture until it resembles pic 1
    Leave for a couple of hours at room temp or overnight in fridge until it looks like pic 2
    Give it a fold, leave for half an hour and then portion into balls
    Ensure its at room temp before shaping into pizzas
    I use 100% Shipton Mill organic no4
