Touring/Audax type people.

If I was gonna ride from Leeds to Amsterdam - not camping, more likely B&Bs/Hostels - is something like a Ribble 525 okay for that type of ride? ie - will take panniers and not break my back.

Not sure what you're asking, you'd be fine on one of these depending on what kind of speed you move at/how much luggage you'd take.
I'd say if you're not camping you should be able to get away with a big Carradice.

Ha, definitely not.

I've never ridden anything even remotely close to having panniers before. But don't really need to go full Tourer. So not sure what to get.
