    Stunning food, really creative flavour combinations. Not afraid to have small bits bitter things on a plate to add contrast. Scallops with beetroot pasta were amazing. Welsh lamb with one stick of immaculate asparagus and a patron pepper purée was delightful, the sweetness of the meat being set off by the bitter purée. Signature dish of Mille Feuille was incredible, the technical construction and with a pepper foam.

    She is the third generation of her family to hold three Michelin stars and wow does it show.
