    thanks for the link, but definitely not what i'm looking for.
    i've gone down this road in the past to be sure and there is nothing like eastern ontario fresh chedder curd available in the uk. fact. until a few weeks from now, with any luck.

    Ive recently discovered a great love and hunger for all things dairy.

    Its having a profoundly good effect on my health too.

    So Ive been considering perhaps making some kefir and some basic cheese, but I havent actually tasted kefir before and am worried about wasting all that whey when making the cheese.

    What can one do with whey? (goes off to google...)

    Ive known how to make paneer for ages, most cheeses are similar in method.

    But what do you do with all the whey? It seems silly to waste it all.

  • Found the whey solution, apparently cheeses such as Riccotta are made from the leftover whey!
