I'll second the Isle of Sheppey and Queenborough, particularly if you want to avoid any hipster vibe. You can walk/cycle most of the sea wall around to Minster beach where you can beachcomb/hunt for fossils when the tide is out.
Also Elmley nature reserve has some lovely 'pods' to stay in surrounded by nature with views across the Swale and walks/bird watching hides.
