It's all low intensity if touring properly, I wouldn't worry too much about protein specifically, just keeping fuelled.
I did a multi month tour in the USA vegetarian on tins of beans and peanut butter and honey sandwiches, picking up clif bars and such on the way, and I was fitter than I'd ever been at the end -

You shouldn’t worry about getting enough protein. It’s impossible not to get enough protein as long as you are not on a calorie restricted diet.

So in other words, eat whole foods until you are full and you’ll have enough protein.Red lentils are a good travel food though. They don’t take long to cook and don’t need soaking.

Hmm, surely the accumulated damage on your legs/muscles has an impact though? I suppose it's not the end of the world if the net result is that you're a bit slower. I don't really have any way to figure out the impact/timescales, I ought to do some reading
