Porsche have made a very great deal of money from restricting the supply of their GT cars, creating incredible demand for them.

that's actually a great example.

Porsche entry models are available 0 line, 0 effort, 0 mark up.

GT != entry model

So, why is Rolex's entry model impossible to get (and it's definitely not Exotic!)

That's the whole point. Sports models are clearly no longer being designated as 'entry level.' Nor am I saying that I think they're exotic. But they're being branded and marketed as such.
