the problem you'll have is that a lot of great brands went bust in the mid 70's due to the oil crisis and the huge shift to quartz movements. So buying a '79 dress(ier) watch is going to be a little tricky as there wasn't much about.
Perhaps a Longines or Omega Geneve might fit the budget? Otherwise there're plenty of lovely watches in your budget from the early 60's if you don't want a '79 manufacture date. I'd start with a Tudor oyster date

I irregularly browse Chrono 24, eyeing up 1985 watches in preparation for my 40th (got a few years yet), and came across this today:

No box, no papers, not really mint, but still seems cheap at £800ish. No idea of values tbh, but other Heuer chronos seems to go for 2k mark and this is titanium too so I'm surprised. Unloved case shape?

1985 watches in preparation for my 40th (got a few years yet), and came across this today:
Just in case you haven't thought of this, buying any sentimental items that will be 40yo from 2024-25 will have a hefty premium. Equally not many people will be selling them from ~2021-ish.
Also be willing to be a bit flexible on the year as any "year" is always a bit vague.

That's why I've started looking already, I'm hoping before 2024 I see something I really want and buy it in advance.
I've got my Steinhart Ocean 1 Vintage (wedding present), G Shock, Gold Seamaster day/date (80s), Rolex OP (80s), Citizen day/date dive beater that I'm probably going to move on, so I'm thinking I want a birth year auto chrono. I also have a quartz Seiko chrono I got for my 15th birthday so while I rarely wear it, it was my first watch I wore day in day out that wasn't an Argos £15 Casio special.

Whereabouts? You may find some grey market deals. If you are able to order stuff online, somewhere like Topper or Timeless Lux will discount retail prices heavily, too.
