@TW plasterboard on brick

The gap is 82cm
fridge is 80cmBut doors need ~3cm to open on either side. Left side is fine because the door is further out than the pillar, but the right side is a wall so I need the 3cm clearance on that side.
So I need the gap to be 83cm (let's say 84) really.I think I might be alright. Just drilled into the plasterboard to see how far back the brick is and it looks like if that came off then it gives me about 2cm to play with.
So ~84cm wide for 83cm needed.
So could remove plasterboard and skim. (Then probably find that I'm about 3mm shy)
I stupidly bought a fridge that is the perfect size for the space it's going in when the doors are closed. And 3cm too narrow as the doors open. Not my finest hour.
Apart from putting it elsewhere or getting a different one then I can try to widen the gap it's in a bit... i.e. cutting out about 3cm of plaster/brick from the outside edge of what was a fireplace (oven to the left).
Is that doable without it being a complete faff?
