Because even if the range of movement of the cage/jockey wheel (which is designed for 10-42) can cope with something like an effective 45t chain growth, which I'm not sure it could, to stop the jockey wheel hitting the cassette in the small ring, you'd have to have it miles away in the big ring (where you spend most your time) and suffer crap shifting.
Sorry, I meant vertical movement!
