For Shimano, it depends which 10 speed pull ratio you're using, but I'm currently having success with 5700 series 105 shifters and a non-series RD-R350-10-SS rear mech. It's only rated to 34t max, but I'm using it with 36t without any need to faff about with the B-tension screw or owt.
