I have had thoughts about 48/32 for the rack/touring gravel bike as I don't think Ive ever used the 11 apart from descending, but, I've also never found 34/34 to not be enough.

Approved. It's what my Arkose is, although sometimes that seems gravel. On towpaths.

I'm having a real hard time to decide if I need mid cage(28 to 36 cassette) or long cage(36 to 42?).
Ideally I'd use a 42 chainring and have a big cassette on the off-road wheelset and a smaller one on the road (and cross race) wheelset -

Check the sprocket capacity of both of those. Cage length doesn't change how big of a cog it can fit under (on its own)

48/32 - 11-32 here, it’s perfect, will be going 11-34 on next cassette, new 11spd one was only out in ultegra spec at the time which is too £££ for me!
