Cool, I'm planning to build a 650b single speed gravel bike after I've done my lugged road bike so kind of wondering the same.

Yeah when I researched the issue for the Stayer 650b fixie the only hubs that seemed to fit the bill were Surly ultra new and the Paul one. Talk to Sam ;)
