The screws they hold the jockey wheels in a Shimano rear mech - threadlock or grease?

Thread lock, because not much. The thread engagement is very short, so you can't do them up tight enough to hold reliably without threadlock. Park Tools website gives 3-3.5Nm for Shimano pulley bolts
