Spent the last days driving from Florence to Rome - ate too much great food. But this pizza from a place called Bonci in Rome was absolutely amazing. Porchetta is a thread favourite and we ate some excellent examples across our journey but the Porchetta pizza sanwich is my new fave thing.

Can anyone go definitive on these questions please?
Is coconut oil ok to eat/ cook with or not? Loads of people rave about it and then it was pronounced completely bad for you.
Should I be doing any cooking with olive oil? or does heating it destroy its goodness.

We are urged to eat less fat and the fat we do eat should be unsaturated, at least, and polyunsaturated at best. Coconut oil is nearly all saturated fat.
As long as you are not deep frying in olive oil, keeping the oil at high temperatures for extended timescales it is unlikely to be a health risk.

I use bog standard olive oil to cook most things. Extra Virgin is for dressing only, heat will ruin the flavour.
For stir frys or any deep frying I use a neutral rapeseed oil that has a high smoke point.

Finally made it back to Nisbett's, grabbed a water bath for the Anova... The DIY hole in the lid turned out OK!

Braise very slowly in tomato sauce then pull out the meat and have pasta with the sauce then serve the meat with sliced red onion, chilli and lots of olive oil in a warm salad...
That's what I used to do, not allowed red meat atm... Cholesterol is a bit high...
