Was also considering getting a length of suitable Id / od pipe (prob be stainless steel) and cutting it to what I need.. is that a shit idea?

It's a fine idea if you can find the right size and then make the cuts flat, parallel and square to the axis. On the other hand, if you could do that then it would suggest that you already own a lathe, which makes me wonder why you asked the question in the first place 🤔

Topeak claim it is good for 160psi.
I'm not sure that it is, but it'll certainly give the 110 / 120 psi I put into my road bike tyres.

I think, without stating the obvs, the trick is to keeping the pump inna bag rather than on the bike, to keep it free of road crud.
