Have you been before? Only if not then maybe it'd be fun for you to check some of their classic 'grand' coffee houses. Café Central is probably the one to do here. See also Café Griensteidl and Café Eiles. They're like gothic churches worshipping pastries.
Just figure you can get your third wave coffee anywhere so when in Rome/Vienna etc...
