So can someone explain to a noob like me why this would be worth €6k? It's a very very nice bike, but the price is clearly beyond 'very very nice', so there should be something that justifies that?

It’s nice, but a bit pricey.

I think it's because it's made in Australia and stuff in Aus is pricey. Equivalent made in Europe is about half the price.

Huh, it really must be pricey... the one you linked is closer to 1/3 of the price.

Isn't that steel, whereas this is titanium?

Edit: both steel. I thought all Baums were Ti.

With all due respect for Stelbel they're not in the same league than Baum.
