With brand new you get the luxury of 0 miles, warranty, and service packages so other than fuel and tyres, you can plan your expenditure well.

That's quite a low mileage limit you've set. 10-12k miles is the yearly average, so the majority of offerings will be only 3-4 years old, which then won't be within £7k budget. Been looking at similar constraint for @cake 's dad and it's a bit easier for him because he wants a smaller car. If you pushed mileage limit to 60k it might open up more options.
Saying that, you could get a focus or focus estate within your constraints.
