Consider where/when you'll get the most light... your opportunity seems to be to capturing breakfast sunlight via the roof?
Try and work out how often you'll use the doors and plan accordingly... If you won't often open the bifolds, then consider making your window to the right a door to the garden (drainage willing), you could then have frameless glazing in the dining area?
If you opt for bi-folds, then don't skimp on the model used as some mechanisms and seals age poorly. Definitely don't introduce the flat roof (as it will be more problematic and expensive).
