It’s obviously going to depend on some extent as to how near the tyres limits you are going to be lapping. But given that people like Bike magazine do run what you brung track days with no vans, slicks, tyre warmers etc you should be fine
That was my hunch, I get the impression sports touring tyres have come a long way in the last decade or so. I've heard the Ron Haslam race school apparently use bridgestone T30 but have no proof.
