I make this one quite often, you can make loads for almost nothing and it freezes fine. Also fine to skip the more random ingredients (mango powder, 'hing' etc) and it's still really good.

Indian recipes you say? My Mum has written an Indian recipe book that has literally just been released (for which I have done the photography). Shameless self plug, but it seemed like the perfect opportunity.
It’s a non-profit book, with all proceeds going to a family member’s memorial fund. This will then be distributed to a number of youth-focused charities.
The recipe are almost all Punjabi (North Indian), with a focus on explaining the reasoning behind certain ingredients and methods, as well as a bit of a social commentary from my mum growing up as a 2nd generation Indian in the UK.
