first ever attempt at a curry today
thought i'd try a chicken balti
it's simmering on the stove as we speak, haven't given it a taste yet as chicken isn't quite cooked, but my eyes are watering in the next room, can feel that curry heat / sweat on my face from inhaling it
onion garlic ginger.... fry
add brown mustard seeds... fry further
add chilli, turmeric, fenugreek seeds, cinnamon stick, bay, cardamom, cloves, cumin seeds, corriander seeds, paprika .... fry more
add chicken and a small amount water .... simmer let flavours infuse
add 2 tins cherry tomatoes
simmer for a couple of hours
have i added to many spices, anyone spot any obvious flaws
the recipe was gleaned from half a dozen recipes on the net and i just kept adding spices from each recipe to my list and just chucked them all in
