Can anyone recommend a solid mtb carbon front fork? 15mm thru axle, 51mm offset, inch and eight to inch and half taper.

Trek Bowie is what it should be, I think? They turn up from time to time.... and they are excellent!

I feel like something along those lines would be amazing for bikepacking/touring. Jumbo slicks, big range, not massive on weight (compared to sus), and go-anywhere.

Yep, I sold mine recently. Quite a few Stache 5 owners fit a squishy fork so they do appear for sellz occasionally.
