Yeah I've just realised I was being an idiot, as usual. I was thinking that if it's an espresso or filter you're timing or weighing, but if it's milk based, how are you going to know how much milk if it's too big, but obviously people who make a cortardo or piccolo are regularly doing that so it's not really a big deal. It's ignorance on my part because I don't really have any knowledge of barista technique!
We'd just pour the right size drink and leave space if the cup is too big. Don't think I've ever had anyone give me a cup that was smaller than what they wanted 😅
