The main thing is that the screen is now larger and has rounded corners. the impression this gives is a significantly larger screen due to how some apps are using the space. I really like how much you can get on this analogue infograph screen in the image below.

The 4 buttons inside the clock can be active to show progress/ live info and the 4 around the outside are active buttons with slightly more information available. My favourite is the coloured scale for low - high temperature, the dark sky app uses this well.
All of the above is great and might work on the older watches, but in the new size i find the buttons are far more accurate and responsive.
