You still have relatively long bikes tho! Im 193 and all legs as well, but 57cm tt and a 100mm stem with flatbars is almost too long for me. I guess its also a matter of how agressive the individual wants to sit. On the other hand i can handle lots of drop cuz my arms are hella long (200cm wingspan)
