Canyon Grail - sizing seems odd compared to your requirements, presumably because you are looking at frame stack/reach and they measure system stack and reach including the bars, but the seat tube on the 2xl is long enough....
had a brief ride off road on one and they are wicked bad fun...

I'd love a Secan, but the sloping top tube would need a 410mm post at max extension.
I've come to the conclusion it'll have to be custom. Bike fit booked for this weekend.

Seeing that this time next year I’ll have a full on dad bod, I should be perfectly placed to focus on my bikepacking/gravel game (it’s just a sportive really isn’t it) so might think about getting a ti version of my cross bike, so will be watching with interest...

Velo Orange Pass Hunter has a straight top tube but not quite your stack/reach.
How fat a tyre do you need?
There can't be many people out there who need 650mm stack but only 390mm reach - and with a straight top tube to boot. You might struggle.
