Maybe just go for a mountain double? I have 40/28 on my daily/tourer. 40t is fine for most things and then you have a bailout gear for really steep/long hills.
That's an option too...
It's just I have the 3x9 groupset already so it'll cost me nothing and all I'd need for the 1x11 is a shifter and some cranks.
