I like DT Swiss stuff. Scherrit says their rims build well and I like the versatility of their hubs. My rear wheel is making some noise though, presume it's hub bearings need replacing but they seem to spin fine. Maybe it's the ratchet thing slipping/gripping on something it shouldn't. Still works fine, just makes squeaking noise.
The fat tyre stuff though I'd probably build cheap since it's not a primary focus. Not look at what DT Swiss offers though.

I've always liked DT offerings as well. I've never been fussed by the ratchet system even if it was quite awesome, but needed regular topping up with grease.
Biggest hit with me was their constant update of rim/width design and how modular their hubs were. Buy caps, install caps. Sorted.
Last set I built, the rear was destroyed in a day, but only because the user went rear wheel first into a rock from an 8ft drop off. He used a tube and the rim held up pressure. Pulled it back with some crocodiles and went back to using it tubeless.
Fair do's. I suppose with the riding you do, you want something that gives you peace of mind in regards to repeat functionality. What else are you looking into?
