For the best people watching pint spot I'd say Grogan's on South William Street. They do a great pint of Guinness and a ham and cheese toastie (lashings of mustard essential).
Best pint of Guinness would probably have to go to Fallons near St Patrick's Cathedral.
Another excellent choice for lunch is The Fumbally. Top class fodder. I'd recommend all of @mentats suggestions there too though. If you happened to be in the mood for a burger you should try Bunsen. They're good enough to ruin all other burgers for you.
As for coffee shops Clement and Pekoe is great if you're sticking to the city centre, most of my favourite coffee shops are a little further out though, 3fe is a proper institution, Bear Market in Blackrock, Mugs in Dalkey, Thru The Green in Dundrum.
They're a bit further out but could be fun to rent a city bike if the weather is nice and explore.
I don't know of any decent bike rental and the only two bike shops I'd suggest are worth a look are Harry's Bikes in Clonskeagh and Cycle Superstore in Tallaght.
