If the coffee tastes bitter that is unlikely to improve with resting (degassing). If the coffee is very fresh it can taste a little thin, and a bit edgy - the flavours aren’t so cohesive and the acidity might lack definition, but bitterness most often comes from over-roasting. It could be a bean defect, or it could be poorly brewed. I would not speculate about what another roaster might be doing, Allpress are great but stuff can slip through the net.
After having a lovely latte made with Allpress beans a couple of weeks ago, I treated myself to a bag of their espresso blend. Arrived Friday and made my first coffee yesterday which tasted extremely bitter.
Everything I've read tends to say that bitterness comes from over extraction, but extraction time etc was exactly the same as I'd usually get with my normal beans. The beans in the packet also seem to smell bitter.
Can coffee beans be too fresh? There's no roasting date on the packet, sadly.
