Has happened on just about any rack I’ve used.

Gaffer tape for a bit more protection. Over time I've seen racks snap from having been chewed up.

Yeah totally normal, if you want to preserve bag and rack a bit, wrap a layer of sacrificial electrical tape around the contact points (replace every month or so), or use light weight inner tubes (defo adds weight).
Black is easy to touch up, especially if it's textured finish.

3 days of cycling with pannier (btwin, plastic clips) has worn the paint off. Is this just to be expected? Is it ridiculous to think about having it powder coated?
