Depends how cheap you want to go, if you think you will keep at it then spend a little more, but if it's just to have a go then cheap is fine.
I started off with planet x selcof ones (were token but look identical) and they never came loose etc. I upgraded to ski bend extensions, they do those now but they are not in stock.
Cut down and flip some old bars or buy cheap bullhorns from wiggle / PX

Yeah I'd pick up a £25 pair (new or second hand) to try first. Vukas are great but not cheap. Deda worth considering too but they use a non-standard extension.

I have some Deda clips fitted with S-bend extensions if you want them? Can also provide some Zipp risers which work with the Deda clips if you want to raise the height of them.

budget friendly
Scilly Suffolk has nailed it, Vuka Alumina (the old ones, not the new ones) is the right choice because of the huge range of adjustment available. You are going to end up trying a lot of adjustments on your first set of tribars. While there are cheaper options ab initio, they start to look more expensive when you run out of adjustment and have to buy another different set. Profile T series would be the other option for the same reason, but the Zipps are nicer.
Deda Crono Nero or Profile Airwing would be a sound cheap base bar.

Thanks for the bars/clips recommendations. I was considering the Vukas for my Dolan but they do seem pricey. How do you know which are the old kind and which are the new, and what's the difference?

Time trial training Q (if this is the right thread). Looking at some "sweet spot" intervals (e.g. 2x20 min) but have no HR or power meter. Is sweet spot less hard than your 10 mile effort? I've read it should be "just below your 40k time trial pace"...

Yep. Are you training on the turbo? I suppose you could do an FTP test and use the speed readings from this to get a benchmark and measure your future training?

Cheers - I'll be training on the road because I don't have a turbo. For various reasons, I want to avoid training indoors and by numbers (although I'm aware of the benefits of both). Basically I'm going from zero training to some training, and that's alright with me.

I always think of sweet spot as my 'long range breakaway' pace. It's fast but sustainable. And very hard to put into words now I think about it...

Which in the case of @Cycliste appears to be the same as her 10 mile pace. Her fastest Strava segment (gravel pits roundabout to Snett and back) in a 100 mile race on the B100/4 is faster than her time for the same segment in a 10 mile race on the B10/3.
I think it's a bit like the old resistor-based speed controllers on Tamiya model cars. You've got three speeds - off, la-la-la, race.
