Agreed.
This os my favorite version, I substituted the raisins for chopped dried apricots.
All you need with this is a good bread and some red wine.

In the Netherlands i had this the other day: Mayolijn from Remia. They have v slightly sweeter mayo over here anyway so it matches that but its really great with chips.

Looks great. I didn’t take a photo but we had that just now for dinner as the recipes sounded ace... will be on our regular list for sure.

I didn't shallow fry the aubergine and courgette, I just sautéed it. Roasting would make it fall apart more I think.
Give it a go tho, it might be good.
It's best the next day served room temperature.

Oh and another shout for Feed The Soul vegan cafe/shop in Godmanstone near Dorchester in Dorset. They've just started opening on Friday evenings with some fun kombucha cocktails, their own 'booch on tap, and great tasty food - will prob be going again this week.

I'm new to this. I've generally avoided trying to make /use ersatz things, but I made the BOSH lasagne on Sunday. Took a while, but was absolutely delicious!

I've also picked up some vegan cheese, charcoal grilled aubergines & artichokes, preserved peppers

Took a packet of Iceland No Bull burgers to a proper caff in Greenford run by a family we know. They do offer a 'veggie' burger alternative of little discernable taste or texture in their various set combinations and were non-plussed when a couple asked for gluten-free food recently.
Chief chef poured scorn on the naming, boldly declaring that if they contained no meat, they could not be burgers! We discussed (inconclusively) whether burger was really just a description of the shape.
The texture and colour of the partially defrosted No Bull burgers were given a thunbs up.
I challenged the owner/his sons/employees to at least try a morsel.
Many varied (weak) protestations, 'full', 'I don't eat burgers', 'I don't like vegetables'.
I persisted and the morsels were consumed. Not so many complaints as the texture was/is clearly an improvement on their catering veggieburger. The taste was deemed not too bad but 'not as good as a real burger'.
The owner is shrewd guy. He knows his weekday clientele of builders/gas fitters/tilers won't succumb, but the weekend passing trade are prime candidates for a premium meat-free burger. -

Friend of a friend has a sanctuary just outside of London. They'll go live a happy life for the rest of their days.
