That looks like tig to me.
The little shadow suggests an undercut which means the steel has been above it's melting point aka not brazing I think

My tourer is losing the brifter for the fd as I miss the trim I got used to with my 8sp campag. That and when touring I find myself in one ring or the other depending on terrain, and first gen 105 is bloody heavy...
