Like, they may be tougher or something, but the actual, advertised, official shimano difference is that the two hoses have a slightly different bore, for slightly different designs in brakes. They may well work fine between the two with a different feel and all but in general I trust shimano over mine and other people's bodging, except with their stupid fucking coated cables.

Changed the hoses to xt on my deore brakes. Kinda had to after perforating the original ones. Now they have even more stopping power and the lever doesn't sink all the way to the bars like it used to with the old hoses. Highly recommended.
