I could do 28 and 33 yeah. Its basically for fast summer rides and winter cross duties, so 28s would be okay. Would that change ideal widths for the rim?

Think it could be better and now a days with the wide carbon rims 28 are better in terms of rolling resistance and aero (supposedly) so faster road riding.
I think HUNT for example say that their wheels are most aero with 28mm Pro One.

I'd be looking for 19-20mm Internal, however looks like lightbicycle does 18mm on their 700c rims.

Have you thought about going with 28 and 33? Is this on your Albanach?
