Any comments on the routing of brake cables
Feels a little too short but that's personal, or at least rear brake outer should elevate as much as front brake outer, judging by picture... Many different "rules" out there about it. Look at classic bikes photos, find the set up you like best and copy.
Personally I'd keep the "suicide brake" extensions, levers look odd when removed. It's only suicidal if you can't appreciate it'll give you less power than getting in the drops, still useful, and representative of an era.
Does the "no leather" rule also apply to vintage saddles?

Thanks @veLLo - I see now that the front cable is a little higher than the rear so will fine tune before cutting. Have also just ordered those alloy bungs as a replacement for the plastic ones which have seen better days.

I think I could persuade myself to go with a vintage brooks swallow, but that's probably the exception. I'm no warrior vegan or anything, just trying to avoid.
