Interlacing has a small effect on transferring load between spokes, and it's traditional. On the other hand, if it does much of that then the spokes can fret and gall :) In some circumstances, it has a slight positive effect on clearance between the spokes and the dérailleur or disc brake caliper, but that's irrelevant on a fixed rear. Many wheels have been built without interlacing, mostly factory straight-pull designs.
TL;DR: Chill out, it probably doesn't make any worthwhile difference.
