Anyone got any recommendations for classic looking brake levers for risers that won’t break the bank?

Cool thanks!

be aware those brake levers are make for canti brakes rather than caliper, so they won't be that strong with caliper brakes.

Are they? Description says they're for calipers.
Q&A:
Q: What is the best type of shimano brake calliper to use with brake levers. Just building up a flat bar bike at present.
A: This lever is compatible with road cantilever brakes and road caliper brakes.
Shimano 105 5700 Road Brake Caliper
Shimano Ultegra 6700 Road Brake Caliper
Shimano CX50 Cantilever Brake -

Since when do cantilevers use a different cable pull to road calipers?

Good point. I run cantis on my Sora brifters and they work fine. V-brakes are a different story.

Ah phew.
Obviously I’m gonna remove the shimano branding and replace the plastic barrel adjuster -

Wire brush
Not easy to get right into the pockets even with a little pencil brush in the Dremel, but definitely a good first step to clear away the bulk of the rust before starting on the chemicals.

Whats the best way to treat this rust?
Depends what result you want. If it's a beater, the best approach is probably to turn the fork the right way up so that you can't see it :)
People I trust swear by Evapo-Rust®, that should clean it up pretty nicely. Gel is probably going to be easiest on that part. Spray on a clear coat to keep it that way.

I purchased a Bombtrack Arise tour not long ago to have a proper comfy commuter and do a bit of touring, so I decided to dismantle the GT and, thanks to @Gaston, I was able to exchange some battered dynamo wheels and bring my GT Force back to its former glory.
I had a quick ride with it and I'm so chuffed. It is such a fun ride. -
